Apple Crumb Pie

Let’s start off with some apologies.

I’m sorry for my aloof behavior: the attention I didn’t give you, the note I didn’t leave, and my abrupt disappearance into a not-so-foreign town.

I’m sorry I only fed you once in three weeks.

But, that quiche was tasty, and… I guess I have some excuses.  You understand, right? There was a jazz festival to listen to, some friends to meet and re-meet, new foods to try, and well, also somewhat of a lack of direction in the køkken.

It all starts in the grocery store, which turns out to be an overwhelming feat. It’s not surprising to find me staring at a line of cheese through a sliding glass door, wondering which one can go on my pizza. And no, you’re right– that does not fare well when I can only seem to find the $10 dollar parmesan. An accidental luxury never hurt anyone, though.

And as for looking like a total space cadet in the refridgerated section, when staring blankly and not able to read Danish: the trick is simple.  Always look inquisitive when feeling incredibly confused.  Squint your eyes only slightly, point eyebrows down, and gently bite lower lip.  It’s a game changer when foreign food shopping, and people don’t start questioning whether you can read at age 20-something.  (In case you were curious for when this happens to you, too.)

No matter the ingredients that I can or cannot find at the store, there are seven or eight ingredients (okay..maybe more) that I can always rely on to be there. And according to my adventures, the simpler, the better. Capeesh?

So maybe you’ve dabbled in the apple pie world or prefer its hip friend, named Crisp. I can’t decide who tastes better.  Why choose?

I surely didn’t! And it was someone-very-special’s birthday. So, no time for up-close gooey shots of oozing apples placed on a pretty plate. Only cheers to another year, paired with creme fraiche for him, and vanilla bean ice cream for me. And I suppose that’s my last apology of the day; I’m sorry for the peek I didn’t give you, of what this looks like from the middle.  But I sense we’ve built some trust now– go on…

apple crumb pie

recipe adapted from

serves 4 people (with second servings in sight)

a pie crust (it’s okay to buy one– don’t be ashamed)

5-6 apples, peeled, cored and sliced

3/4 cup white sugar

2 tablespoons lemon juice

2 tablespoons cornstarch

3 tablespoons all-purpose flour

1 teaspoon ground cinnamon

the crumby (and definitely not mediocre) topping

1/2 cup all-purpose flour

1/2 cup brown sugar

1/4 cup butter

1/4 cup old-fashioned oats

Preheat the oven to 350 degrees Fahrenheit.

Prepare pie crust onto a pie plate.

Peel and slice apples.  Set aside in a large bowl. Toss in lemon juice. Add together the cornstarch, flour, sugar, and cinnamon.  Toss into the apples, making sure to evenly coat the slices.

In a separate bowl, mix together the topping ingredients: flour, brown sugar, butter, and oats. Use your fingers to mix, making sure that the butter is turning into small crumbles amongst the flour, oats, and sugar mix.  Add this mixture onto the top of your apples.  Use as much as you want!

Bake for 1 hour until the top is golden brown; be careful that the top does not get too hot– those ingredients burn easily.
